Huacatay (pronounced “wa-ka-tai”) is a herb with strong aromatic flavor that is used in many traditional Andean dishes. Peruvian roast chicken (pollo a la brasa) is typically served with a sauce made with huacatay and aji amarillo, and it's also essential in a number of popular dishes – such as 'ocopa', where the sauce is made with toasted peanuts, and 'aji verde', which we've got a recipe for!
