Mote corn (maiz mote) is a large white corn kernel that is used to make a wide range of Latinamerican dishes. In Peru, it’s used to make a nourishing soup called Patasca or Sopa de Mote. These dishes are typically eaten in the colder ‘Sierra’ (plains) region, where they keep you in tip-top condition whatever the weather.
