Harina morada (purple corn flour) is used to make drinks and desserts with a rich and distinctive flavour. We love it served in the warm drink ‘colada morada’, perfect for those breezy winter days – whether you’re in the Andes or not!
You can use it to make mazamorra, a sweet jelly-like traditional dessert served on street stalls up and down the country.
It’s also popular in neighbouring Ecuador, where it’s used to make colada morada, a thick drink made with fresh fruit and spices and served with ‘guaguas de pan’, little dolls made from bread and used in various special days.
