You can use it to make mazamorra, a sweet jelly-like traditional dessert served on street stalls up and down the country.
It’s also popular in neighbouring Ecuador, where it’s used to make colada morada, a thick drink made with fresh fruit and spices and served with ‘guaguas de pan’, little dolls made from bread and used in various special days.
