Viva Peru’s Peruvian Supperclub: Manchester, 14 May 2015

Aji de gallina recipe

Join Viva Peru for an evening of Peruvian food as we run our first ever pop-up at Kosmonaut in Manchester’s Northern Quarter on Thursday May 14th 2015. We’ll be ready for guests from 6:30pm, although you can arrive any time before 8:45pm. Of course, you can always arrive earlier for drinks in the lovely Kosmonaut bar.

Here’s what we’ll be cooking up.

MENU ONE

On tables on arrival
Moreish ‘maiz cancha‘ – a salted Peruvian popping corn – with a selection of spicy salsas

 Sea bass ceviche
 Fresh pieces of sea bass marinated in lime, chilli and coriander; served with sliced sweet potato. Really zingy, and a true classic particularly popular on the Peruvian coast

Aji de Gallina
Shredded chicken smothered in a spicy, creamy sauce made from Peru’s indispensable yellow chilli. Served over rice the traditional way – with a slice of boiled egg!

Peruvian Panna Cotta
A creamy Italian style Panna Cotta topped with ‘mazamorra morada’ purple corn sauce and berries

MENU TWO

 Papas a la huancaina
 This is a real hit with visitors to Peru. Sliced, boiled potatoes are covered in a creamy, spicy sauce made with aji amarillo (yellow chilli). Served the traditional way, with a slice of boiled egg and a sprinkling of black olive

Bistec a lo pobre
Sirloin steak marinated in Peruvian spices, served with freshly-cooked chips, zingy ‘criolla’ salsa and topped with a fried egg

Peruvian Panna Cotta
A creamy Italian style Panna Cotta topped with ‘mazamorra morada’ purple corn sauce and berries

MENU THREE (vegetarian)

On tables on arrival

Champiñones saltados
Lomo saltado is a Peruvian stir-fry, a dish which shows off their diverse influences – as far as Spain and China! This version is made with mushrooms, stir-fried in a red-wine sauce with tomatoes and chips. Yes, chips!
